Their pork sausage is 90% lean and is often referred to as a “sausage patty”—that’s because unlike the traditional crumbled sausage on thin-crust pizzas, at Lou Malnati’s they spread out the sausage making sure to cover the cheese layer below but leaving some room so the cheese can bubble up through the sausage and the tomato layers.
